I am a self confessed cheesecake fend and my baby girl is too > this is her favourite dessert of all time.
b. chocolate cheesecake
ingredients
2 X philly cream cheese block
1 X 250gram chocolate block > dark chocolate is best
1 small fresh thickened cream carton
1 tablespoon of castor sugar
2 tablespoon of cacao powder
½ packet arrowroot biscuits
3 tablespoons of butter (melted)
3 tablespoons of desiccated coconut
fresh blueberries for decoration
Base
Blend and crush the arrowroot biscuits and coconut in food processor, add melted butter to mixture and press into lined cheesecake tin.
Place in fridge while making the cheese mixture.
Mixture
Blend and philly cheese, cream until smooth > add castor sugar and cacao powder.
Melt in large bowl in microwave, chocolate and ½ cream carton for 3 minutes.
Stir constistantly when melted.
Fold in the melted chocolate to the cheesecake mixture until thoroughly mixed.
Remove the base from the fridge and pour in cheesecake mixture and smooth the cake top.
Sprinkle the cacao powder on top of cheescake.
Place in fridge for 1 hour until set and serve with fresh blueberries.
