My most famous and asked for by all my friends when they visit is b. roast vegetable salad.
Ingredients
eggplant
sweet potato
pumpkin
zucchini
haloumi
rice bran oil
salt and pepper
Method
- Roughly chop into cubes – eggplant, sweet potato, pumpkin, zucchini, haloumi
- Place vegetables onto baking paper on oven tray and sprinkle with rice bran oil and season with salt and pepper.
- Roast in oven for 45mins.
- Allow to cool and add to sliced fresh spinach leaves or to any plate of food.
