Ingredients
Half a Cauliflower- cut into pieces
1 tablespoon Curry Powder for sprinkling
1/2 cup Sultanas
1/2 cup Sunflower Seeds
Bunch Parsley- roughly diced
1/2 cup Peas
2 tablespoons of Persian Feta
1 tablespoon of Rice Bran oil
Lemon – squeezed over before serving
Salt / Pepper
Method
- Place cauliflower and sunflower seeds onto baking paper in oven tray. Swirl tablespoon of rice bran oil over cauliflower and seed – season with curry powder – by sprinkling over the top and rubbing into cauliflower.
- Place tray in moderate oven for 40 mins – bake until golden brown.
- Defrost peas by gently cooking in microwave for 2 mins submerged in water- allow to cool.
- Place all other ingredients – sultanas, parsley, feta, peas, lemon into bowl.
- Once cauliflower/seeds have cooled a little – add to other ingredients.
- Serve immediately in large bowl.
