Curried Cauliflower Salad

Ingredients

Half a Cauliflower- cut into pieces

1 tablespoon Curry Powder for sprinkling

1/2 cup Sultanas

1/2 cup Sunflower Seeds

Bunch Parsley- roughly diced

1/2 cup Peas

2 tablespoons of Persian Feta

1 tablespoon of Rice Bran oil

Lemon – squeezed over before serving

Salt / Pepper

Method

  1. Place cauliflower and sunflower seeds onto baking paper in oven tray.  Swirl tablespoon of rice bran oil over cauliflower and seed – season with curry powder – by sprinkling over the top and rubbing into cauliflower.
  2. Place tray in moderate oven for 40 mins – bake until golden brown.
  3. Defrost peas by gently cooking in microwave for 2 mins submerged in water- allow to cool.
  4. Place all other ingredients – sultanas, parsley, feta, peas, lemon into bowl.
  5. Once cauliflower/seeds have cooled a little  – add to other ingredients.
  6. Serve immediately in large bowl.
