Green and Blueberry Salad

Ingredients

spinach leaves – chopped

fresh basil – chopped

fresh mint – chopped

brown rice- cooked

chia seeds- cooked with rice

avocado- sliced

cucumber- sliced length ways

blueberries- as many as you like! (refer to blueberry benefits blog)

bbq chicken breast (without skin)

Method

  1. layer rice and chia with the fresh spinach, mint and basil
  2. place a boundary of cucumber pieces
  3. layer a line of slice avocado
  4. place piles of chicken in the corner
  5. sprinkle in piles blueberries for sweetness

no dressing required!
