b. Easy Salmon Penang Curry
A midweek curry that’s quick, nourishing and packed with flavour.
Ingredients:
- 2 large salmon fillets, cut into large pieces
- 1 onion, sliced
- 1 teaspoon of garlic
- Sea Salt
- Olive oil
- 1 zucchini, sliced
- Mushrooms, sliced
- 1 jar Ayam Penang Curry Paste
- 1 capsicum, sliced
- Broccoli, chopped
- 1 can Ayam Coconut cream
- Rice or quinoa, to serve
Method
- Heat a little olive oil in a large pan and cook the salmon pieces until golden and crispy on the outside. Leave in the pan add onion, garlic plus Sea Salt.
- Add the onion, zucchini and mushrooms to the same pan and sauté until softened.
- Add the whole jar of Ayam Penang Curry Paste and stir through the vegetables for a minute or two.
- Add the capsicum and broccoli.
- Pour in the coconut milk and stir everything together.
- Return the salmon to the pan, reduce the heat and simmer gently for 15 minutes, allowing all those flavours to come together.
- Serve with fluffy rice or quinoa.
