Ingredients

2 tablespoons pine nuts

cut 1 bunch fresh spinach (silverbeet)

200 grams of feta

8 x eggs

fresh asparagus spears

 

Base

 

1 cup LSA

1 cup Almond meal

½ Sunflower seeds

2 eggs

oil

salt and pepper

 

Method

 

Line a baking tray with grease paper

 

Mix in a bowl the base dry ingredients and add the wet ingredients

 

Press firmly into tray and bake for 15min on 180 degrees Celsius

 

Beat eggs, add spinach, feta and pour over warm base.

 

Layer asparagus and sprinkle pine nut on top.

 

Bake for another 20 minutes or until brown on top.

 

Remove from tray and cut while warm.

 

Enjoy.
