b. Clean Eating Tacos

This recipe is loved by my lil’ crew and is made every Tuesday without a doubt.  It is healthy, clean, easy and totally delicious.  Add it to your weekly food routine. 

b. Clean Eating Soft Tacos 

Ingredients

  • chicken mince
  • sweet potato
  • pumpkin
  • broccoli
  • baked beans
  • soft tortillas

SALAD BOARD

  • baby spinach chopped
  • fresh mint diced
  • sweet tomato chopped
  • mild cheese/feta
  • cucumber
  • grated beetroot
  • grated carrot
  • greek yogurt
  • avocado

Method

  1. Brown chicken mince with splash of rice bran oil and salt and pepper.
  2. Steam pumpkin, broccoli, sweet potato until cooked.
  3. Mash the vegetable mix and add to the cooked chicken mince.
  4. Add a can of baked beans for taste and protein (optional)
  5. Prepare salad board with your favourite salads my favourite b. list is above.
  6. Warm the tortillas
  7. Serve as a buffet style

Optional:

  • add fresh pineapple
  • grated apple
  • roast vegetables
  • corn cobs
