b. cold bbq salmon with crunchy lentil sprouts salad
Ingredients
- bbq salmon – cooked night before and kept in fridge overnight
- spinach leaves
- baby tomatoes
- avocado
- grated whole beetroot
- lentil spouts – high in protein
- persian fetta
- lemon
- capers
Method
- add all washed and prepared salad ingredients into bowl
- mix with fingers lightly
- layer in centre of plate
- pull apart salmon and layer around the outside
- squeeze lemon and sprinkle caper
- add salt and pepper to taste

This looks pretty yum. Do you grow your own sprouts?
I like the idea of including more spouted beans and seeds but baulk at buying the packaged version due to wastage There are only so many bean sprouts you can eat before the packet goes off.
